Winemaking Process:
At Château German, the vines are nurtured with great care through sustainable practices, such as grass growing in every other row to encourage biodiversity. The vineyard employs reasoned protection methods, ensuring the health of the vines. The pruning is done with the double guyot method, and several green operations—de-budding, suckering, leaf removal, thinning, and green harvesting—are carefully managed to improve grape quality.
The harvest is both mechanical and manual, with strict plot selection and sorting in the vineyard as well as in the winery. After total de-stemming, the grapes undergo fermentation in thermo-regulated stainless steel tanks, with fermentation temperatures maintained at around 28°C for optimal extraction of color and flavor. Pneumatic pressing follows to ensure the wine’s elegance and finesse.
